Our Favourite Coastal Mocktails

When sunshine hits the Cornish coast, there is something about a beautifully made drink that makes the moment feel even better. At Waterfront in Portreath, we love serves that suit the setting, and that includes alcohol free options that are still full of flavour. For us, the best beach drinks should feel fresh, stylish and a little transportive. They should suit long afternoons by the water, catch ups with friends, golden hour photos and those slow holiday moments when nobody is in a rush. A great mocktail can do all of that and more, especially when it takes its cues from the coast.
That is exactly what inspired this collection. These five alcohol free serves bring together coastal flavours, crisp ingredients and soft seaside colours for drinks that feel right at home by the beach. From sea herbs and cucumber to coconut and citrus, each one offers something a little different while still keeping that relaxed, sea kissed feel we love here at Waterfront.
1. Fennel and Cucumber Spritz
This is the mocktail for people who like their drinks light, elegant and quietly different. Our fennel and cucumber spritz is soft, green and refreshing, with a flavour that feels like a cool sea breeze on a warm day.
Cucumber brings a clean, delicate freshness, while fennel adds a subtle aniseed note that gives the drink a more grown up edge. Together, they create something crisp and calming, with just enough complexity to keep every sip interesting. A splash of soda or sparkling water lifts it all beautifully, making it ideal for sunny afternoons and terrace moments overlooking the coast.
In terms of ingredients, this serve is all about freshness. Cucumber ribbons or juice, fennel syrup for a lightly infused fennel base, citrus for brightness and sparkling water are the heart of it. Garnished with a fennel frond and a thin slice of cucumber, it looks effortlessly pretty in the glass.
This is one of those beach drinks that feels especially photogenic too. Pale green tones, plenty of ice and delicate garnish make it a natural fit for that modern coastal look.
2. Samphire Paloma
If one drink captures the taste of the shoreline, it might be this one. Our samphire paloma takes the bright, juicy appeal of a classic paloma and gives it a distinctly coastal finish.
Samphire has that naturally salty, mineral quality that instantly brings to mind sea air, rock pools and wild Cornish walks. It works surprisingly well in a mocktail, especially alongside pink grapefruit and lime. The citrus keeps the drink lively and zesty, while the samphire adds depth and a savoury edge that makes it feel fresh rather than sugary.
To make it work, the samphire can be infused into a syrup or used in a light saline solution, then balanced with grapefruit juice, lime and sparkling soda. The result is vibrant, gently salty and full of personality. It is the sort of drink that feels playful and polished at the same time.
Served in a salt rimmed glass with a wedge of grapefruit or a small sprig of samphire, it has serious summer appeal. For guests looking for beach drinks that feel a little unexpected, this is always a lovely option.
3. Briny 0% Gin Martini
This one is for the martini lovers, the clean taste enthusiasts and anyone who likes their drinks with a little attitude. A briny 0% gin martini takes everything that makes a martini chic and strips it back into an alcohol free serve that still feels special.
The coastal influence comes through in the saline note. A tiny touch of brine transforms the drink, giving it that oceanic savouriness that makes it feel crisp, refined and slightly dramatic. A good alcohol free gin alternative brings the botanical backbone, while dry vermouth style notes and olive brine help shape the rest.
The flavour is cool, herbal and quietly powerful. You get juniper, delicate botanicals and that unmistakable savoury finish that lingers in the nicest way. It is less about sweetness and more about texture, aroma and mood.
This is also one of our favourite beach drinks for presentation. Served ice cold in a classic martini glass with olives, it looks timeless but still works beautifully in a coastal setting. Think sea mist, linen, candlelight and the sound of waves in the distance.
4. Salty Virgin Margarita
A salty virgin margarita is one of those drinks that instantly puts people in holiday mode. It is bright, citrusy, sharp in all the right places and finished with that essential salt rim that makes every sip pop.
For us, this mocktail is all about energy. Fresh lime juice gives it its backbone, orange adds softness and a non alcoholic agave style base rounds everything out. The salt is what gives it that proper seaside character. It keeps the drink lively and helps all the citrus notes sing.
If you want a little extra coastal flair, a tiny splash of saline solution can deepen the flavour without overpowering it. Shaken hard over ice and strained into a beautifully rimmed glass, it feels bold, refreshing and made for sunshine.
Among our most crowd pleasing beach drinks, this is the one that works for almost everyone. It is familiar, fun and full of that holiday by the sea spirit. Add a lime wheel, a textured glass and a sunlit table, and it is ready for its photo.
5. Coconut and Matcha Cloud
For something softer, dreamier and a little more modern, our coconut and matcha cloud is a gorgeous choice. This mocktail leans into creamy texture, pale tones and a calm, seafoam inspired finish that feels very much at home by the coast.
Coconut brings mellow sweetness and a silky body, while matcha adds earthiness, colour and a gentle lift. Together they create a drink that feels both grounding and airy. The flavour is smooth and lightly tropical, with just enough depth from the matcha to stop it feeling too rich.
The cloud effect comes from shaken coconut cream carefully layered top to give the drink its signature soft finish. It is the sort of serve that turns heads as soon as it lands on the table. Visually, it is everything we love about modern beach drinks. Elegant, beachy and made to be shared online.
A dusting of matcha and toasted coconut finish it beautifully. It feels feminine, contemporary and just a little indulgent, which makes it perfect for slow seaside sipping.
Coastal Mocktails at Waterfront
At Waterfront, we believe drinks should feel every bit as memorable as the view. These five mocktails bring together coastal flavours, beautiful presentation and that laid back sense of escape that makes Portreath so special.
From crisp cucumber and fennel to sea touched samphire, bright citrus and creamy coconut, each drink captures a different side of the coast. Some are zesty and vibrant, others are softer and more serene, but all of them are designed to feel fresh, stylish and full of seaside character.
At Waterfront, these are the kinds of alcohol free serves we love sharing. Thoughtfully made, full of coastal character and lovely in the glass, they prove that beach drinks can still bring plenty of punch without alcohol.
